How to make gourmet vegetables?

Very juicy, tasty. Does anyone know how to make vegetables such as this. It wasn’t just a matter of boiling the veggys, it appears they do something more then this to make them taste so good.

I notice a lot of the better restaurants seem to have similar methods of making veggys.

Some more details. Vegetables included beets, onions, carrots to name a few. They were on the side of the plate.

The vegetables looked steamed and were full of moisture, you could take the liquid with every bite.

They were also moist on the outside, as if coated in butter.

Finally, they didn’t look like they had been barbequed.
